The best non-Rumble match is indeed Jack v. Trips, though Angle-Benoit is awrsome.
I agree with Kevin, 2001 was a terrific rumble. Kane gave a career performance; he was built as such an unstoppable monster throughout the match. It made Austin's win come off as unbelievably dramatic.
